Cilantro Lime Quinoa: Ανακατέψτε μαγειρεμένη κινόα με χυμό λάιμ, φρέσκο κόλιανδρο, αλάτι και ένα κουταλάκι του γλυκού σιρόπι σφενδάμου Plantains: Ξεφλουδίστε και κόψτε το ώριμο plantain και τηγανίστε τις φέτες σε ένα αντικολλητικό τηγάνι μέχρι να καραμελώσουν ελαφρώς και από τις δύο πλευρές (με μερικές πιτσιλιές νερό για να μην κολλήσει) Τεμπέ: Κόβουμε το τέμπε* σε φέτες και στη συνέχεια τηγανίζουμε σε αντικολλητικό τηγάνι και από τις δύο πλευρές μέχρι να ροδίσουν, γλασάρουμε με σάλτσα της επιλογής μας στο τέλος Σαλάτα λάχανο: Πλένουμε και ψιλοκόβουμε το λάχανο και μετά κάνουμε «μασάζ» με χυμό λεμονιού, ένα κομμάτι αβοκάντο και αλάτι Μαύρα φασόλια Αβοκάντο με χυμό λάιμ και θρυμματισμένες νιφάδες τσίλι
