Tacky Zucchini Carrot Rice By veganfoodcrazy ΥΛΙΚΑ: 1 κουταλιά της σούπας vegan βούτυρο half μικρό κόκκινο κρεμμύδι κομμένο σε λεπτές φέτες 2 σκελίδες σκόρδο, κομμένο σε λεπτές φέτες 1 κολοκυθάκι, τριμμένο 1 καρότο, τριμμένο 2 κουταλιές της σούπας αλάτι ψιλοκομμένο 2 φλιτζ. κρεμμύδι Σουσάμι Τρίβουμε τα κολοκυθάκια και τα βάζουμε σε ένα σουρωτήρι πάνω από ένα μπολ. Προσθέστε 1 κουταλάκι του γλυκού αλάτι και αφήστε το να κάτσει για περίπου 10 λεπτά. Προσθέστε τα κολοκυθάκια σε μια καθαρή πετσέτα πιάτων και στύψτε όσο περισσότερο υγρό μπορείτε. ζεσταίνουμε ένα μεγάλο τηγάνι σε μέτρια προς δυνατή φωτιά. Προσθέστε το vegan βούτυρο και αφήστε το να λιώσει. Προσθέτουμε τα κρεμμύδια και το σκόρδο και σοτάρουμε για λίγα λεπτά. Προσθέτουμε τα καρότα και τα κολοκυθάκια και 1 κουταλάκι του γλυκού αλάτι. Σοτάρουμε για λίγα λεπτά μέχρι να αρχίσουν να μαλακώνουν τα λαχανικά. Προσθέστε το ρύζι και το τυρί και μαγειρέψτε για περίπου 2 λεπτά ακόμη ή μέχρι να λιώσει το τυρί. Ρίξτε κουταλιά σε ένα μπολ και προσθέστε το φρέσκο κρεμμύδι και το σουσάμι
