ΡΙΖΟΤΟ ΠΕΣΤΟ ΜΑΝΙΤΑΡΙΑ ΣΚΟΡΔΟΥ 🍃 By sarahsveganrecipes Συνταγή σερβίρει 2 200 γρ ρύζι ριζότο (εγώ χρησιμοποίησα arborio) 1 λίτρο ζωμό λαχανικών 1 κρεμμύδι three σκελίδες σκόρδο 250 γραμμάρια μανιτάρια 2 κουταλιές της σούπας πέστο 1 κουταλάκι του γλυκού πέστο 1 κουταλάκι του γλυκού πέστο: σούπας νερό 2 κουταλιές της σούπας διατροφική μαγιά 1 κουταλιά της σούπας ψιλοκομμένους ξηρούς καρπούς/σπόρους 1 κουταλάκι του γλυκού κόκκους σκόρδου 1/four κουταλάκι του γλυκού αλάτι Τρόπος Ψιλοκόβουμε το κρεμμύδι και το σκόρδο και τα προσθέτουμε σε μια μεγάλη κατσαρόλα με λίγο ελαιόλαδο. Σοτάρουμε μέχρι να μαλακώσουν και μετά προσθέτουμε τα μανιτάρια. Μόλις μαλακώσει, προσθέστε το ρύζι και ανακατέψτε για ένα λεπτό. Προσθέστε περίπου 200 ml από τον ζωμό και ανακατέψτε. Αφήνουμε σε μέτρια φωτιά μέχρι να απορροφηθεί ο ζωμός και επαναλαμβάνουμε μέχρι να εξαντληθεί όλος ο ζωμός. Όσο ψήνεται το ριζότο, φτιάχνουμε το πέστο. Προσθέστε όλα τα υλικά σε ένα μπλέντερ ή στον επεξεργαστή τροφίμων και ανακατέψτε μέχρι να ομογενοποιηθούν. Ανακατέψτε 2 κουταλιές της σούπας πέστο μέσα από το ριζότο μόλις ψηθεί σχεδόν και ανακατέψτε το υπόλοιπο μόλις σερβίρετε τις δύο μερίδες. Απολαμβάνω!
