Πικάντικα φασόλια και τάκος ρυζιού της yummyyatra 💛 Συνταγή: Υλικά: ⠀ 11/2 φλιτζάνια καστανό ρύζι⠀ 1 jalapeño, ξεσποριασμένο και ψιλοκομμένο⠀ 2 μεγάλα κίτρινα κρεμμύδια, κομμένα σε λεπτές φέτες⠀ 1 κουτάκι βιολογικά μαύρα φασόλια, χωρίς αλάτι στραγγισμένα και ξεπλυμένα ⠀ 2 μέτριες πιπεριές (χρησιμοποιημένες κόκκινες και κίτρινες), κομμένες σε λωρίδες⠀ 1/four φλιτζάνι καλαμπόκι κατεψυγμένο, ξεπαγωμένο⠀ three σκελίδες σκόρδο, ψιλοκομμένες⠀ 2 κουταλιές της σούπας χυμό λάιμ⠀ 11/2 φλιτζάνια κόλιανδρο, χοντροκομμένο⠀ Αλάτι, για γεύση⠀ 1 κουταλάκι του γλυκού τσίλι σε σκόνη⠀ 1 κουταλάκι του γλυκού αλεσμένο κύμινο⠀ 1 κουταλάκι του γλυκού καπνιστή πάπρικα⠀ Ζεστές τορτίγιες καλαμποκιού, όσο χρειάζεται ⠀ Φέτες λάιμ, για το σερβίρισμα ⠀ Σάλσα, για το σερβίρισμα (προαιρετικά)⠀ ⠀ Οδηγίες⠀ Σε μια μέτρια κατσαρόλα ανακατεύουμε το ρύζι, 2 φλ. νερό και αλάτι και αφήστε το να σιγοβράσει. Στη συνέχεια, σκεπάστε και χαμηλώστε τη φωτιά και μαγειρέψτε μέχρι να απορροφηθούν όλα τα υγρά, περίπου 25 με 30 λεπτά. Εναλλακτικά, μπορείτε να ψήσετε το ρύζι σε χύτρα ταχύτητας. Αφήνουμε στην άκρη.⠀ Εν τω μεταξύ, σε ένα τηγάνι από μαντεμένιο, προσθέτουμε τα ψιλοκομμένα κρεμμύδια, λίγο αλάτι και τα σοτάρουμε σε χαμηλή φωτιά μέχρι να γίνουν διάφανα τα κρεμμύδια. ⠀ Προσθέστε το σκόρδο, το jalapeño, το αλεσμένο κύμινο, την καπνιστή πάπρικα, το αλεσμένο adobo chili και σοτάρετε για 1 λεπτό⠀ Προσθέστε τις πιπεριές, συνεχίστε το σοτάρισμα για 2 λεπτά ⠀ Στη συνέχεια, προσθέστε το ξεπαγωμένο καλαμπόκι και τα ξεπλυμένα μαύρα φασόλια⠀ Ελέγξτε για καρύκευμα και προσθέστε αλάτι , αν χρειάζεται.⠀ Σβήνουμε τη φωτιά, προσθέτουμε τον ψιλοκομμένο κόλιαντρο, ανακατεύουμε μέχρι να ομογενοποιηθούν ⠀ Ενώνουμε απαλά τα μπαχαρικά, τα λαχανικά και το μαγειρεμένο ρύζι. Ανακατέψτε μαζί, βεβαιωθείτε ότι οι κόκκοι του ρυζιού είναι άθικτοι. ⠀ Σερβίρετε σε ζεστές τορτίγιες, με πικάντικη σάλτσα και λίγο φρέσκο χυμό λεμονιού. Απολαμβάνω!
